Gourmet Zucchini Cakes

These are my own creations that grew out of one simple recipe and the need to use

up a bounty of zucchini. Because these cakes have become such best sellers over the

years, I actually plant extra to accommodate demand. I plant Grey Zucchini, a

much thicker, meatier variety than the usual. If left on the vine in the fall, the fruits will

develop a thick skin and store well over winter, so I have these cakes available almost

eight months out of the year.

Cakes come in 3” X 6” loaves. $3.50 each or $15 for five (of the same flavor).

These cakes all freeze well.

Chocolate Chocolate Chip

Chocolate batter with chocolate chips, coconut and nuts.

Chocolate Peanut Butter Chip

Mint Chocolate Chip

Lite Mint Chip

White batter, mixed mint flavoring, and chocolate chips for those who

prefer it less rich.

Cherry Chocolate Chip

Chocolate batter, coffee and almond flavor, with bits of maraschino

cherries and chocolate chips.

Cherry Almond Chip

Just like above, except in a white batter rather than chocolate, (for those who

prefer it less rich. Also contains nuts

Cinnamon Banana Nut

White batter with bananas, nuts, and chocolate chips.

Peanut Butter Banana

Remember those sandwiches we used to eat as kids? (I still do.) These two

flavors together are simply divine. Also contains chocolate chips.

Cherry Banana

Banana, maraschino cherries, nuts and almond flavoring, this one is for those

who prefer no chocolate.

Banana Rum Raisin

Modeled after my best-selling jam, this one is mild and smooth.

Orange Gumdrop

Chocolate batter with diced orange gumdrops and chocolate chips. You

know how those chocolate- covered orange jellies in the boxes of gourmet

chocolate taste. . . ?

Oatmeal Raisin

Moist and rich, with a hint of cinnamon, like the cookie, but better.

Lemon Poppy Seed

Rich lemony flavor and creamy texture has made this one an instant hit.

Mocha Nut Chip

The rich flavor of coffee combined with chocolate chips and nuts. Yum!
