Veggie Cakes

Believe it or not, these evolved from the ever-popular zucchini cake recipes which I have been developing for about eight years. The veggie cakes are geared toward diabetics, or those who prefer something less sweet. I have five flavors so far, and they have become quite popular in a short time.

 

Each loaf cake costs $3.50, or five (of the same flavor) for $15.

 

Tomato Basil Onion

   A perfect match to my Herby Tomato Onion jam, this one also contains parsley. Each loaf only has about 1 Tablespoon sugar. A perfect accompaniment to a thick vegetable soup.

 

Seedy Tomato Parmesan

   Caraway, dill, and celery seeds in a rich tomato batter, with a sprinkle of parmesan cheese on top. Goes great with spaghetti or lasagna.

 

Spicy Tomato

   Again modeled off my jam of the same name, this warm and spicy cake combines tomatoes with cinnamon, cloves, and allspice, sweetened with about 3 Tablespoons brown sugar per loaf.

 

Pesto

   This one is zucchini based, rather than tomato, just to keep the texture moist. It contains mixed basils, walnuts, and a sprinkling of garlic salt.

 

Green Tomato Cinnamon Raisin

   This veggie cakes is actually a sweet dessert-type creation, but not quite as sweet as the zucchini cakes. Also contains nuts.
